Roasted Parmesan Butternut Squash and Peppers

Prehead OvenIngredients
- 1 butternut squash, peeled, seeded, and cut into 1/2-inch cubes
- 1 red or yellow bell pepper, seeded and chopped
- 1 green bell pepper, seeded and chopped
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 2oz parmesan cheese
- salt and pepper to taste
What to do?
Bake the veggies for about 17 minutes or until fork-tender. Then turn on the broiler in your over and broil for 3 minutes to get the butternut squash golden brown.
Remove the baking sheet from the oven and immediately sprinkle the parmesan cheese over the veggies and toss.
