Ingredients
  1. 2 Tbsp. Butter
  2. 3 1/2 Tbsp. flour
  3. 1 1/2 cups whole milk
  4. 8 oz white cheddar cheese, grated 1 3/4 cups. Separate out 1/4 cup
  5. 2 oz pepper jack cheese, grated 1/4 cup. Separate out 1/2 of the cheese
  6. 1/2 tsp coarse salt
  7. 1/2 tsp chipotle chili powder
  8. 1/4 tsp garlic powder
  9. 1/8 tsp black pepper
  10. 8oz macaroni pasta
  11. 1/2 tsp paprika
  12. 3 tbsp bread crumbs
What to do?
Melt butter in a medium sauce pan over medium heat. Once the butter has melted, whisk in the flour and continue to whisk and cook for 2 minutes.
Slowly add milk, whisking constantly.
Let sauce cook until it thickens, about 10 minutes, while stirring frequently.
Remove pan from heat and add the cheeses(1 1/2 cups cheddar and 1/2 the pepper jack) and add, salt, chili powder, garlic powder, black pepper. Stir until everything is fully melted.

Preheat oven to 350.

Cook the Macaroni according to the package, but remove 1 minute before the lowest cook time on the package. Rinse the pasta in cold water and let it drain.
Oil and 8-inch casserole dish and set aside.
Combine the cooked pasta with the sauce and mix until well coated. Pour the mac and cheese mixture into the casserole dish.
Cover the mac and cheese with remaining cheeses, and then the bread crumbs
Bake for 20 minutes or until the mac and cheese is bubbling and brown around the edges.
